Chuck Wagon Recipes

Here at Horse Feathers we want to offer more than just merchandise to sell. So besides our product line of hat bands, leather hat bands, beaded hat bands, horse hair hat bands and combined horse hair and beaded hat bands, we are offering tempting recipes for you to try. All have been tried and tested and guaranteed to be good. And remember the camp cook's cowboy scarf was one of his most useful accessories. This simple little western wild rag could be used as a strainer, cover for food, pot holder, dish towel, or table cloth or what ever.

The chuck wagon was invented by the great rancher and trailblazer Charles Goodnight. Generally the food was pretty basic— meat, biscuits, potatoes and onions, beans, and canned tomatoes and molasses, called lick, for dessert. And of course, lots of coffee. Well, we have taken the chuck wagon to new heights. We should call this the gourmet wagon because our camp cook is a genius at finding interesting fresh ingredients along the trail. Vichyssoise
Serves 5
This is one of our favorite summer recipes. It is so light and refreshing.

2 leeks, chopped

1 onion, chopped

2 tablespoons unsalted butter

¾ cup thinly sliced potatoes

2 1/3 cups chicken stock

Salt to taste

Ground black pepper

1 1/8 cups heavy whipping cream

Gently sweat the chopped leeks and the chopped onion in butter until soft, about 8 minutes. Do not let them brown. Add potatoes and stock to the saucepan. Salt and pepper to taste. Bring to a boil and simmer gently for 30 minutes. Puree in a blender or food processor until very smooth. Cool. Gently stir in the cream before serving. Top with fresh chopped chives.
